Better. . .

Leftovers I could eat every day (and have!)


This was dinner on Monday and Tuesday and lunch on Wednesday:

Spaghetti squash with fire-roasted tomatoes, diced jalapeno, a pinch of Quattro Formaggi cheese blend, roasted eggplant, roasted bell pepper, capers, roasted carrots, and peas
To round out lunch, some portioned popcorn (the second for an emergency) and some grapes and figs
I've never been able to eat dinner food for lunch before. I'm starting to get the hang of this.

Only problem is I'm still STARVING for dinner. . . . This seems like plenty of food to me, what am I doing wrong? Maybe my tummy just prefers 8:30-5???

Try adding more protein for satiety, such as beans.

I wish I could offer some advice... with my desk job, I have a similar problem with being really hungry during the day. I tend to eat breakfast early (~5:30am) so by 10 or so, I'm already hungry. What time of day do you usually workout? Is it in the morning or after work? Also... having the popcorn already popped is smart. I always feel terrible making popcorn in the microwaves at work, because everyone there has to smell it!

I think maybe you need some protein and/or a little fat. While your lunch looks delicious, I'm guessing that meal is still under 250 calories, which may be to little to fuel you through the day. (esp. if you exercise in the am.) That's happened to me in the past, and I do much better now with a little more protein and fat. Just my $.02,

Really good advice, I think you are all right. I need a bit more protein. I try to keep my calories low but I should add some beans or nuts to stay full longer.

Toni- sounds like we are in a similar boat. I work out at 6:30 am, with breakfast around 8 or 8:30, lunch at noon, afternoon snack at 3:00 and dinner around 6:30 or 7.
You know, I only prepopped the popcorn because I get 4 servings out of one bag so I just got them all ready! But it worked out nicely, I'll do that from now on.
